  • 4 oz Rice Noodles
  • 1 medium Carrots
  • 1/2 medium Cucumber
  • 1/4 cup Mint Leaves
  • 1/4 cup Cilantro Leaves
  • 4 leaves Lettuce
  • 2 tbsp Coconut Aminos
  • 1 tbsp Rice Vinegar
  • 1 tbsp Lime Juice
  • 1 tsp Sesame Oil
  • 1/4 tsp Red Pepper Flakes

Instructions

  1. 1Cook rice noodles according to package directions.
  2. 2Cut carrots and cucumber into thin strips.
  3. 3Prepare dipping sauce: whisk together coconut aminos, rice vinegar, lime juice, sesame oil, and red pepper flakes.
  4. 4Dip each rice paper wrapper in warm water for a few seconds until softened.
