Ingredients

  • 1 lb Firm tofu
  • 2 tbsp Cornstarch
  • 1/4 cup Peanut butter
  • 2 tbsp Soy sauce (tamari)
  • 2 tbsp Rice vinegar
  • 1 tbsp Honey
  • 1 tsp Sesame oil
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 1/4 tsp Red pepper flakes
  • 12 leaves Lettuce leaves
  • 1/2 cup Shredded carrots
  • 1/2 cup Bean sprouts
  • 1/4 cup Chopped peanuts

Instructions

  1. 1Press tofu to remove excess water. Cut into cubes.
  2. 2Toss tofu cubes with cornstarch.
  3. 3Pan-fry or bake tofu until crispy.
  4. 4In a separate bowl, whisk together peanut butter, tamari, rice vinegar, honey, sesame oil, garlic, ginger, and red pepper flakes to make the peanut sauce.
  5. 5Add crispy tofu to the peanut sauce and toss to coat.
  6. 6Serve tofu in lettuce cups with shredded carrots, bean sprouts, and chopped peanuts.
