Ingredients

  • 8 oz Rice Noodles
  • 1 lb Firm Tofu
  • 1 medium Red Bell Pepper
  • 1 large Carrot
  • 1 medium Cucumber
  • 1/4 cup Rice Vinegar
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Maple Syrup
  • 2 tablespoons Lime Juice
  • 1 teaspoon Ginger (grated)
  • 2 tablespoons Sunflower Seed Butter
  • 2 tablespoons Vegetable Oil

Instructions

  1. 1Cook rice noodles according to package directions. Rinse with cold water and set aside.
  2. 2Press tofu to remove excess water. Cut into cubes.
  3. 3Heat vegetable oil in a skillet over medium-high heat. Add tofu and cook until golden brown and crispy on all sides. Set aside.
