Ingredients

  • 14 oz Firm tofu
  • 2 tbsp Coconut oil
  • 3 tbsp Green curry paste
  • 1 can Coconut milk
  • 1 can Bamboo shoots
  • 1 large Bell pepper
  • 1 cup Broccoli florets
  • 1/2 cup Thai basil
  • 2 tbsp Fish sauce substitution (soy sauce)
  • 1 tsp Sugar
  • 1 tbsp Lime juice
  • 4 cups Cooked jasmine rice

Instructions

  1. 1Press the tofu to remove excess water and cut into cubes.
  2. 2Heat coconut oil in a large pot or Dutch oven over medium heat.
  3. 3Add green curry paste and cook, stirring constantly, until fragrant, about 1 minute.
  4. 4Add coconut milk, bamboo shoots, bell pepper, and broccoli florets. Bring to a simmer.
  5. 5Add the tofu and fish sauce substitution (soy sauce), and sugar. Simmer for 15 minutes, or until the vegetables are tender.
  6. 6Stir in Thai basil and lime juice.
  7. 7Serve hot over cooked jasmine rice.
