Ingredients

  • 1.5 lbs Chicken breast
  • 8 oz Rice noodles
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 1 large Carrot
  • 4 stalks Green onions
  • 1/4 cup Peanut butter
  • 2 tbsp Rice vinegar
  • 2 tbsp Soy sauce (tamari)
  • 1 tbsp Honey
  • 1 tsp Sesame oil
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 1/4 tsp Red pepper flakes

Instructions

  1. 1Cook rice noodles according to package directions.
  2. 2Cut chicken into bite-sized pieces and stir-fry in a large skillet or wok until cooked through.
  3. 3Add bell peppers, carrots, and green onions to the skillet and stir-fry for 5 minutes.
  4. 4In a separate bowl, whisk together peanut butter, rice vinegar, tamari, honey, sesame oil, garlic, ginger, and red pepper flakes to make the peanut sauce.
  5. 5Add the cooked noodles and peanut sauce to the skillet and toss to combine.
  6. 6Serve immediately.
