Ingredients

  • 1 cup Red Lentils
  • 2 medium Potatoes
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tbsp Ginger
  • 1/2 cup Peas
  • 1 tsp Turmeric
  • 1 tsp Garam Masala
  • 1/2 tsp Cumin
  • 1/2 tsp Coriander
  • 1/4 tsp Chili Powder
  • 2 cups Vegetable Broth
  • 1/2 tsp Salt
  • 1 tbsp Tapioca Starch

Instructions

  1. 1Rinse the red lentils.
  2. 2Dice the potatoes and onion.
  3. 3Heat oil in a pot or large skillet over medium heat. Add onion and cook until softened.
  4. 4Add garlic and ginger and cook for another minute.
  5. 5Add turmeric, garam masala, cumin, coriander, and chili powder (if using). Cook for 30 seconds.
  6. 6Add red lentils, potatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils and potatoes are tender and the liquid is absorbed. Use tapioca starch slurry to thicken.
