Ingredients

  • about 450 g Beef Sirloin
  • 4 cups Broccoli Florets
  • about 225 g Rice Noodles
  • 3 cloves Garlic
  • 1 tbsp Ginger
  • 4 tbsp Gluten-Free Soy Sauce (Tamari)
  • 2 tbsp Oyster Sauce (Gluten-Free)
  • 1 tbsp Brown Sugar
  • 1 tbsp Cornstarch
  • 0.5 cup Beef Broth
  • 1 tsp Sesame Oil

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Slice the about 450 g Beef Sirloin thinly against the grain into 2.54 cm bite-sized pieces. In a medium bowl, combine the sliced beef with 1 tablespoon of Gluten-Free Soy Sauce (Tamari) and 1 tablespoon of Cornstarch. Mix thoroughly to ensure all beef pieces are coated, then let the beef marinate at room temperature for 15 minutes.
  2. 2Bring a large pot of water to a rolling boil over high heat (100°C / 100°C). Add the about 225 g Rice Noodles to the boiling water and cook for 5-7 minutes, or until they are tender but still have a slight chew. Drain the cooked noodles immediately using a colander and set them aside.
  3. 3Heat a 35.56 cm wok or large skillet over high heat (204.4-232.2°C / 200-230°C) until it is very hot and a drop of water evaporates instantly. Add the 1 tsp Sesame Oil to the hot wok. Carefully add the marinated about 450 g Beef Sirloin in a single layer and stir-fry for 2-3 minutes, turning occasionally, until the beef is browned on all sides. Remove the beef from the wok and set it aside on a clean plate.
  4. 4Add the 4 cups Broccoli Florets to the same hot wok and stir-fry over high heat for 3-4 minutes, until the broccoli turns bright green and is slightly tender but still crisp. Add the 3 cloves of minced Garlic and 1 tablespoon of grated Ginger to the wok and stir-fry for an additional 30 seconds, until they become fragrant.
  5. 5In a small bowl, whisk together the remaining 3 tablespoons of Gluten-Free Soy Sauce (Tamari), 2 tablespoons of Gluten-Free Oyster Sauce, 1 tablespoon of Brown Sugar, and 0.5 cup of Beef Broth until well combined. Pour this entire sauce mixture into the wok with the broccoli, garlic, and ginger.
  6. 6Return the cooked about 450 g Beef Sirloin to the wok with the sauce and vegetables. Stir everything together constantly over high heat for 1-2 minutes, allowing the sauce to thicken slightly and evenly coat the beef and broccoli. Ensure the beef is heated through to an internal temperature of 63°C.
  7. 7Divide the cooked about 225 g Rice Noodles evenly among four serving bowls. Spoon the hot beef and broccoli stir-fry mixture over the noodles in each bowl and serve immediately.
