Ingredients

  • 1 pound Wide rice noodles
  • 1 block Extra-firm tofu
  • 3 tablespoons Soy sauce
  • 2 tablespoons Dark soy sauce
  • 1 tablespoon Rice vinegar
  • 2 teaspoons Coconut sugar
  • 3 cloves Garlic
  • 1 bunch Chinese broccoli (gai lan)
  • 2 tablespoons Vegetable oil

Instructions

  1. 1Place the 1 block of extra-firm tofu on clean kitchen towels or paper towels. Place a heavy object on top of the tofu to press out excess water for at least 15 minutes. Once pressed, cut the 1 block of extra-firm tofu into 1-inch cubes.
  2. 2Heat 1 tablespoon of vegetable oil in a 12-inch skillet over medium-high heat (400°F / 200°C). Add the pressed and cut 1 block of extra-firm tofu cubes to the hot oil and fry for 8-10 minutes, turning occasionally, until golden brown and crispy on all sides. Remove the crispy tofu from the skillet and set it aside on a plate.
  3. 3Bring a large pot of water to a rolling boil. Add the 1 pound of wide rice noodles to the boiling water and cook for 3-5 minutes, or until the noodles are tender but still have a slight chew. Drain the cooked 1 pound of wide rice noodles well in a colander and set them aside.
  4. 4In a small bowl, whisk together the 3 tablespoons of soy sauce, 2 tablespoons of dark soy sauce, 1 tablespoon of rice vinegar, and 2 teaspoons of coconut sugar until the coconut sugar is fully dissolved.
  5. 5If needed, wipe out the 12-inch skillet. Add the remaining 1 tablespoon of vegetable oil to the 12-inch skillet and heat over medium-high heat (400°F / 200°C). Mince the 3 cloves of garlic. Add the minced 3 cloves of garlic to the hot oil and stir-fry for 30 seconds, until fragrant but not browned. Wash the 1 bunch of Chinese broccoli (gai lan). Cut the stems into 1/2-inch pieces and the leaves into 1-inch pieces. Add the cut Chinese broccoli stems to the skillet and stir-fry for 2 minutes. Then, add the cut Chinese broccoli leaves and stir-fry for another 2-3 minutes, until the broccoli is tender-crisp and bright green.
  6. 6Add the cooked 1 pound of wide rice noodles, the reserved crispy 1 block of extra-firm tofu, and the prepared sauce to the 12-inch skillet with the Chinese broccoli. Stir-fry everything together for 2-3 minutes, tossing gently to ensure the noodles, tofu, and broccoli are evenly coated with the sauce and heated through.
  7. 7Serve the Dairy-Free Pad See Ew with Tofu immediately.
