Dairy-Free Mango Sticky Rice

Ingredients

  • 1 cup Sweet Rice (Glutinous Rice)
  • 1.5 cans Coconut Milk
  • 1/2 cup Sugar
  • 1/4 tsp Salt
  • 2 Ripe Mangoes
  • 1 tsp Sesame Seeds (optional)

Instructions

  1. 1Rinse the sweet rice and soak in water for at least 4 hours, or preferably overnight.
  2. 2Drain the rice and steam in a steamer lined with cheesecloth for 30-40 minutes, or until cooked through and sticky.
  3. 3While the rice is steaming, prepare the coconut sauce. In a saucepan, combine 1 can of coconut milk, sugar, and salt.
  4. 4Heat over medium heat, stirring until sugar is dissolved. Simmer for 5 minutes, then remove from heat.
  5. 5Once the rice is cooked, transfer it to a bowl and pour half of the coconut sauce over it. Stir well and let it sit for 10-15 minutes to absorb the sauce.
  6. 6Peel and slice the mangoes.
  7. 7Divide the sticky rice among serving plates. Top with mango slices and drizzle with the remaining coconut sauce. Garnish with sesame seeds, if desired.
