Ingredients

  • 1 cup Cooked Chicken, shredded
  • 1/2 cup Potato, diced and cooked
  • 1/4 cup Carrot, diced
  • 1/4 cup Peas, frozen
  • 1/4 cup Onion, finely chopped
  • 1 teaspoon Ginger, grated
  • 1 clove Garlic, minced
  • 1 teaspoon Curry Powder
  • 1/2 teaspoon Cumin
  • 2 tablespoons Cilantro, chopped
  • 1/4 teaspoon Salt
  • 8 sheets Spring Roll Pastry (Rice Paper)
  • 1 tablespoon Olive Oil

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Preheat your oven to 190°C.
  2. 2In a large bowl, combine the 1 cup cooked chicken (shredded), 1/2 cup potato (diced and cooked), 1/4 cup carrot (diced), 1/4 cup peas (frozen), 1/4 cup onion (finely chopped), 1 teaspoon ginger (grated), 1 clove garlic (minced), 1 teaspoon curry powder, 1/2 teaspoon cumin, 2 tablespoons cilantro (chopped), and 1/4 teaspoon salt. Mix everything together well until it is all combined.
  3. 3Cut each of the 8 sheets of spring roll pastry into 4 equal pieces, making a total of 32 smaller pieces. Brush each of these pastry pieces lightly with the 1 tablespoon of olive oil.
  4. 4Place about 1 teaspoon of the chicken mixture into the center of each small pastry piece. Fold the pastry over the filling to create a small triangle or pocket shape. Lightly dampen the edges of the pastry with a tiny bit of water to help seal them closed.
  5. 5Arrange the filled samosa pockets in a single layer on a baking sheet. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and looks crispy.
  6. 6Serve the chicken samosa pockets warm.
