  • 2 lbs Goat Meat
  • 3 tbsp Lemon Juice
  • 4 cloves Garlic
  • 1 inch Ginger
  • 1 tsp Paprika
  • 0.5 tsp Cumin
  • 1.5 tsp Salt
  • 0.5 tsp Black Pepper
  • 3 medium Tomatoes
  • 1 medium Onion
  • 0.5 cup Cilantro
  • 1 small Chili (optional)

Instructions

  1. 1Cut the goat meat into serving pieces.
  2. 2In a bowl, mix the lemon juice, minced garlic and ginger, paprika, cumin, salt, and pepper.
  3. 3Marinate the goat meat with the mixture for at least 30 minutes (or overnight in the refrigerator).
  4. 4Preheat the oven to 375°F (190°C).
  5. 5Place the marinated goat meat on a roasting pan and roast for 60-75 minutes, or until cooked through and tender.
  6. 6While the meat is roasting, prepare the kachumbari. Dice the tomatoes and onion.
  7. 7Chop the cilantro and chili (if using).
  8. 8Combine the tomatoes, onion, cilantro, and chili in a bowl. Season with salt and pepper to taste.
  9. 9Serve the roasted goat meat hot with a side of kachumbari.
