Ingredients

  • 3 cups All-purpose flour
  • 0.5 cup Sugar
  • 2 tsp Baking powder
  • 1 tsp Cardamom powder
  • 1 cup Coconut milk
  • 2 tbsp Coconut oil, melted
  • 3 cups Vegetable oil, for frying
  • 1 can Coconut milk (for dipping sauce)
  • 1 tsp Vanilla extract (for dipping sauce)
  • 2 tbsp Sugar (for dipping sauce)

Instructions

  1. 1In a large bowl, combine flour, sugar, baking powder, and cardamom powder.
  2. 2Add coconut milk and melted coconut oil and mix until a soft dough forms.
  3. 3Knead the dough for 5-7 minutes, or until smooth and elastic.
  4. 4Cover the dough and let it rest for 30 minutes.
  5. 5Roll out the dough to about 1/4 inch thickness and cut into triangles or squares.
  6. 6Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  7. 7Fry the mandazi in batches for 2-3 minutes per side, or until golden brown.
  8. 8Remove from oil and drain on paper towels.
  9. 9To make the coconut dipping sauce: In a small saucepan, combine coconut milk, vanilla extract, and sugar.
  10. 10Heat gently over low heat, stirring until the sugar is dissolved. Do not boil.
  11. 11Serve the mandazi warm with the coconut dipping sauce.
