Ingredients

  • 12 sheets Rice paper wrappers
  • 1 lb Cooked shrimp, peeled and deveined
  • 4 oz Vermicelli rice noodles
  • 8 leaves Lettuce leaves
  • 1/2 cup Fresh mint
  • 1/2 cup Fresh cilantro
  • 1/2 cup Carrots, julienned
  • 1/2 cup Peanut-Free Dipping Sauce

Instructions

  1. 1Cook vermicelli noodles according to package directions. Drain and rinse with cold water.
  2. 2Prepare all ingredients: cook shrimp, julienne carrots, wash lettuce and herbs.
  3. 3Fill a shallow dish with warm water. Dip each rice paper wrapper into the water for a few seconds until softened.
  4. 4Lay the softened wrapper on a flat surface. Arrange a lettuce leaf, vermicelli noodles, shrimp, carrots, mint, and cilantro on the wrapper.
  5. 5Fold the sides of the wrapper inward and then roll tightly from the bottom up.
  6. 6Serve immediately with the peanut-free dipping sauce.
