Ingredients

  • 8 oz Bihon (rice noodles)
  • 2 tbsp Vegetable oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 cup Carrots
  • 1 cup Cabbage
  • 1/2 cup Green beans
  • 1 cup Soy curls
  • 1/4 cup Soy sauce
  • 2 cups Vegetable broth
  • 4 wedges Lemon wedges

Instructions

  1. 1Soak the bihon noodles in warm water for about 10-15 minutes until softened. Drain and set aside.
  2. 2Heat vegetable oil in a large wok or pan over medium heat. Sauté onion and garlic until fragrant.
  3. 3Add carrots, cabbage, and green beans. Stir-fry for about 3-5 minutes until slightly tender.
  4. 4Add the rehydrated soy curls and stir-fry for another 3-5 minutes.
  5. 5Pour in soy sauce and vegetable broth. Bring to a simmer.
  6. 6Add the softened bihon noodles and toss to combine. Cook until the noodles have absorbed most of the liquid.
  7. 7Serve hot with lemon wedges.
