Ingredients

  • 1 lb Dried white beans
  • 1 large Onion
  • 1 large Carrot
  • 12 oz Vegan sausage
  • 2 tbsp Tomato paste
  • 28 oz Crushed tomatoes
  • 2 cups Vegetable broth
  • 1 tbsp Smoked paprika
  • 1 tsp Marjoram
  • 2 tbsp Olive oil

Instructions

  1. 1Soak the dried white beans in water overnight, or for at least 8 hours. Drain.
  2. 2Dice the onion, carrot, and vegan sausage.
  3. 3In a large pot, sauté the onion and carrot in olive oil until softened.
  4. 4Add the vegan sausage and sauté for a few more minutes.
  5. 5Add the soaked and drained white beans, tomato paste, crushed tomatoes, vegetable broth, smoked paprika, and marjoram.
  6. 6Bring to a boil, then reduce heat and simmer for at least 1 hour, or until the beans are tender and the flavors have melded.
  7. 7Season with salt and pepper to taste.
