Ingredients

  • 2 lbs Ground Turkey
  • 2 lbs Sweet Potatoes
  • 1/2 cup Almond Flour
  • 1 Egg
  • 1 Onion (chopped)
  • 2 cloves Garlic (minced)
  • 1/4 cup Ketchup
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1/4 cup Milk (dairy or non-dairy)
  • 2 tablespoons Maple Syrup

Instructions

  1. 1Preheat oven to 350°F (175°C).
  2. 2Peel and chop sweet potatoes into 1-inch cubes. Boil until tender, about 15-20 minutes. Drain and mash with milk and maple syrup. Set aside.
  3. 3In a large bowl, combine ground turkey, almond flour, egg, chopped onion, minced garlic, ketchup, Dijon mustard, thyme, salt, and pepper.
  4. 4Mix well with your hands until all ingredients are evenly distributed.
  5. 5Place the meat mixture in a loaf pan.
  6. 6Spread the mashed sweet potato evenly over the top of the meatloaf.
  7. 7Bake for 55-60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 165°F (74°C).
  8. 8Let rest for 10 minutes before slicing and serving.
