Ingredients

  • 1.5 lb Ground turkey
  • 2 medium Sweet potatoes, peeled and diced
  • 2 15-oz cans Canned black beans, rinsed and drained
  • 1 28-oz can Canned diced tomatoes
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 tablespoons Chili powder
  • 1 tablespoon Cumin
  • 1 teaspoon Smoked paprika
  • 1/4 teaspoon Cayenne pepper
  • 2 cups Chicken broth
  • 1 tablespoon Olive oil
  • 1 medium Avocado, diced
  • 1/2 cup Dairy-free sour cream

Instructions

  1. 1Heat olive oil in a large pot or Dutch oven over medium heat.
  2. 2Add onion and cook until softened, about 5 minutes. Add garlic and cook for another minute.
  3. 3Add ground turkey and cook, breaking it up with a spoon, until browned.
  4. 4Stir in chili powder, cumin, smoked paprika, and cayenne pepper. Cook for 1 minute more.
