Ingredients

  • 2 15 oz cans Black beans
  • 1 cup Cooked rice
  • 0.5 medium Onion
  • 0.5 medium Bell pepper
  • 1 tbsp Chili powder
  • 1 tsp Cumin
  • 0.5 tsp Smoked paprika
  • 0.5 cup Breadcrumbs (gluten-free)
  • 2 medium Avocado
  • 2 tbsp Lime juice
  • 0.25 cup Cilantro
  • 2 tbsp Plant-based milk (unsweetened)
  • 2 tbsp Olive oil
  • 4 count Burger buns

Instructions

  1. 1Drain and rinse black beans. Mash half of the beans with a fork.
  2. 2In a large bowl, combine mashed beans, whole beans, cooked rice, diced onion, diced bell pepper, chili powder, cumin, smoked paprika, and breadcrumbs. Mix well.
  3. 3Form the mixture into 4 patties.
  4. 4Heat olive oil in a skillet over medium heat. Cook patties for 5-7 minutes per side, or until heated through and slightly browned.
