Ingredients

  • 4 ears Corn on the cob, husks removed
  • 1/2 cup Vegan Butter, softened
  • 1 tbsp Chipotle peppers in adobo sauce, minced
  • 2 tbsp Lime juice, fresh
  • 2 tbsp Cilantro, chopped
  • 1/4 tsp Salt
  • 1/2 tsp Chili powder
  • 1/4 cup Dairy-free cotija cheese, crumbled (optional)

Instructions

  1. 1Preheat grill to medium heat.
  2. 2In a small bowl, combine the softened vegan butter, minced chipotle peppers, lime juice, cilantro, salt, and chili powder. Mix well to create the chipotle lime butter.
  3. 3Grill the corn on the cob for about 10-15 minutes, turning occasionally, until lightly charred and cooked through.
  4. 4Remove the corn from the grill and immediately brush generously with the chipotle lime butter.
  5. 5Sprinkle with crumbled dairy-free cotija cheese (if using).
