Ingredients

  • 2 cans Black beans
  • 1 cup Cooked brown rice
  • 1/2 Red onion
  • 1/2 Bell pepper
  • 2 cloves Garlic
  • 2 Chipotle peppers in adobo sauce
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1/2 cup Breadcrumbs
  • 2 tbsp Olive oil
  • 4 Burger buns
  • Toppings

Instructions

  1. 1Drain and rinse black beans. Mash one can of beans with a fork.
  2. 2In a large bowl, combine mashed beans, whole beans, cooked brown rice, finely diced red onion and bell pepper, minced garlic, chopped chipotle peppers, cumin, chili powder, and breadcrumbs.
  3. 3Mix well until combined.
  4. 4Form mixture into 4 patties.
  5. 5Heat olive oil in a large skillet over medium heat.
  6. 6Cook patties for 5-7 minutes per side, or until browned and heated through.
  7. 7Serve on toasted burger buns with your favorite toppings.
