  • 2 cups Broccoli Florets
  • 2 cups Carrots
  • 1 large Red Bell Pepper
  • 2 tbsp Avocado Oil
  • 2 cloves Garlic
  • 1 tbsp Ginger
  • 1/4 cup Coconut Aminos
  • 2 tbsp Honey
  • 1 tbsp Rice Vinegar
  • 1 tsp Arrowroot Powder
  • 1 tsp Sesame Seeds

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Toss broccoli, carrots, and bell pepper with avocado oil, salt, and pepper.
  3. 3Spread vegetables on a baking sheet and roast for 15 minutes.
  4. 4While vegetables are roasting, prepare the teriyaki sauce: In a small saucepan, combine minced garlic, ginger, coconut aminos, honey, rice vinegar, and arrowroot powder.
  5. 5Bring to a simmer over medium heat, stirring constantly, until sauce has thickened, about 5 minutes.
  6. 6Place salmon fillets on a separate baking sheet lined with parchment paper.
  7. 7Brush salmon with teriyaki sauce and bake for 10-12 minutes, or until cooked through.
  8. 8Serve salmon with roasted vegetables and sprinkle with sesame seeds.
