Ingredients

  • 8 oz Bihon rice noodles
  • 1 lb Chicken breast
  • 1 medium Carrot
  • 1 cup Cabbage
  • 2 stalks Celery
  • 1/2 medium Onion
  • 3 cloves Garlic
  • 2 cups Chicken broth
  • 2 tbsp Coconut aminos
  • 1 tbsp Soy sauce (allergen aware brand)
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tbsp Vegetable oil

Instructions

  1. 1Soak bihon rice noodles in warm water until softened, about 10-15 minutes. Drain.
  2. 2Cut chicken breast into thin strips.
  3. 3In a large pan or wok, sauté onion and garlic until fragrant.
  4. 4Add chicken strips and cook until browned.
  5. 5Add carrot, cabbage, and celery and cook until slightly softened.
  6. 6Pour in chicken broth and bring to a simmer.
  7. 7Add soaked noodles and coconut aminos. Stir until noodles are cooked and the broth is absorbed.
  8. 8Season with salt and pepper. Serve hot.
