Ingredients

  • 1.5 lb Cod fillets
  • 2 lb Potatoes
  • 2 cups Dairy-free milk
  • 2 tbsp Flour
  • 0.25 tsp Nutmeg
  • 0.5 cup Breadcrumbs (gluten-free)
  • 2 tbsp Butter
  • 0.5 tsp Salt
  • 0.25 tsp White pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Boil the potatoes until tender. Mash them with a little dairy-free milk and butter. Set aside.
  3. 3Poach the cod fillets in water until cooked through. Flake the fish and set aside.
  4. 4In a saucepan, melt the butter. Whisk in the flour and cook for 1 minute. Gradually whisk in the dairy-free milk until smooth.
  5. 5Bring to a simmer and cook until the sauce thickens. Season with salt, pepper, and nutmeg.
  6. 6Gently fold the flaked fish into the dairy-free sauce.
  7. 7Spread the mashed potatoes in the bottom of a baking dish. Pour the fish mixture over the potatoes.
  8. 8Sprinkle with gluten-free breadcrumbs and dot with butter.
  9. 9Bake for 30-40 minutes, or until the top is golden brown and bubbly.
