Ingredients

  • 2 lb Potatoes, peeled and thinly sliced
  • 1 Onion, thinly sliced
  • 3 oz Canned anchovy fillets, drained
  • 1.5 cups Dairy-free cream (oat or cashew)
  • 0.25 cup Gluten-free breadcrumbs
  • 2 tbsp Dairy-free butter, melted
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Preheat oven to 375°F (190°C). Grease a baking dish.
  2. 2In a large bowl, combine the sliced potatoes and onion. Season with salt and pepper.
  3. 3Layer half of the potato mixture in the prepared baking dish. Top with half of the anchovy fillets.
  4. 4Repeat the layers with the remaining potato mixture and anchovy fillets.
  5. 5Pour the dairy-free cream over the casserole. Sprinkle with gluten-free breadcrumbs and drizzle with melted dairy-free butter.
  6. 6Bake for 50 minutes, or until the potatoes are tender and the top is golden brown.
