Ingredients

  • 4 6oz Salmon Fillets
  • 1 lb Asparagus
  • 2 tbsp Olive Oil
  • 0.5 cup Coconut Cream
  • 2 tbsp Fresh Dill
  • 1 tbsp Lemon Juice
  • 0.5 tsp Garlic Powder
  • 0.5 tsp Salt
  • 0.25 tsp Pepper

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Toss asparagus with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet.
  3. 3Place salmon fillets on a separate baking sheet.
  4. 4Bake salmon and asparagus for 12-15 minutes, or until salmon is cooked through and asparagus is tender.
  5. 5While salmon and asparagus are baking, prepare the dill sauce: Combine coconut cream, dill, lemon juice, garlic powder, salt, and pepper in a small bowl. Mix well.
