  • 6 cups Stale Bread
  • 8 oz Chorizo
  • 1 medium Red Bell Pepper
  • 3 cloves Garlic
  • 3 tbsp Olive Oil
  • 1 tsp Smoked Paprika
  • 2 tbsp Flaxseed Meal
  • 6 tbsp Water
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1In a small bowl, mix flaxseed meal with water. Let it sit for 5 minutes to thicken (flax egg).
  2. 2Heat olive oil in a large skillet over medium heat. Add chorizo and cook until browned.
  3. 3Add red bell pepper and garlic to the skillet and cook until softened, about 5 minutes.
  4. 4Add the stale bread to the skillet and toss to coat with the oil and chorizo drippings.
  5. 5Stir in smoked paprika, salt, and pepper.
  6. 6Pour the flax egg mixture over the bread mixture and stir to combine. Cook until heated through and slightly softened, about 5-7 minutes.
