Ingredients

  • 1 lb Macaroni pasta
  • 2 medium Potatoes, peeled and diced
  • 1 cup Unsweetened applesauce
  • 2 cups Dairy-free shredded cheddar cheese
  • 1 cup Unsweetened almond milk
  • 2 tbsp Nutritional yeast
  • 1 tbsp Tapioca starch
  • 1 medium Onion, thinly sliced
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Cook macaroni according to package directions. Drain and set aside.
  3. 3While the pasta is cooking, boil the diced potatoes until tender, about 10-12 minutes. Drain and set aside.
  4. 4In a saucepan, combine dairy-free cheddar, almond milk, nutritional yeast, and tapioca starch. Cook over medium heat, whisking constantly, until the cheese is melted and the sauce is smooth and thickened. Remove from heat.
  5. 5In a large bowl, combine the cooked macaroni, potatoes, and applesauce.
  6. 6Pour the dairy-free cheese sauce over the mixture and stir to combine.
  7. 7Transfer to a baking dish. Bake for 20 minutes, or until bubbly and lightly browned.
  8. 8While the dish is baking, heat olive oil in a skillet over medium heat. Fry the sliced onion until golden brown and crispy. Drain on paper towels.
  9. 9Top the baked Älplermagronen with the crispy fried onions before serving.
