  • 1 lb Ground lamb
  • 1/4 cup Almond flour
  • 1 large Egg
  • 2 cloves Garlic
  • 1 tsp Dried oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 cup Sunflower Seed Flour
  • 2 tbsp Olive oil
  • 1 jar (12 oz) Roasted red peppers
  • 2 tbsp Tomato paste
  • 1 tbsp Red wine vinegar
  • 1/2 tsp Smoked paprika

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2In a large bowl, combine ground lamb, egg, garlic, oregano, salt, and pepper. Use Sunflower Seed Flour to replace the binding function of the almond flour.
  3. 3Roll mixture into small meatballs.
  4. 4Heat olive oil in an oven-safe skillet over medium heat.
  5. 5Sear meatballs on all sides until browned (about 5-7 minutes).
  6. 6Remove meatballs from skillet and set aside.
  7. 7In a blender or food processor, combine roasted red peppers, tomato paste, red wine vinegar, smoked paprika, and remaining garlic.
  8. 8Blend until smooth to create the Romesco sauce.
  9. 9Pour Romesco sauce over meatballs in the skillet.
  10. 10Bake for 20-25 minutes, or until meatballs are cooked through.
