Ingredients

  • 1 lb Kielbasa Sausage
  • 4 slices Bacon
  • 1 medium Onion (diced)
  • 2 cloves Garlic (minced)
  • 6 cups Chicken Broth
  • 1 cup Cauliflower Rice
  • 1/2 cup Sour Cream
  • 2 tbsp Apple Cider Vinegar
  • 1 tsp Marjoram
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Cook bacon in a large pot or Dutch oven until crispy. Remove bacon and set aside, reserving bacon fat in the pot.
  2. 2Add diced onion and minced garlic to the pot and sauté until softened, about 5 minutes.
  3. 3Slice kielbasa and add it to the pot. Cook until lightly browned, about 5 minutes.
  4. 4Pour in chicken broth and bring to a simmer.
  5. 5Add cauliflower rice and simmer for 15-20 minutes, or until the cauliflower is tender and has thickened the soup slightly.
  6. 6Stir in apple cider vinegar, marjoram, salt, and pepper.
  7. 7Just before serving, stir in sour cream and heat through, but do not boil.
  8. 8Crumble the cooked bacon and sprinkle over the top.
  9. 9Serve hot.
