Ingredients

  • 4 medium Zucchini
  • 1 lb Ground Beef
  • 1/2 medium Onion
  • 1/2 cup Tomato Sauce
  • 1 tbsp Chili Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Garlic Powder
  • 1/2 cup Dairy-Free Shredded Cheese
  • 1 tbsp Avocado Oil
  • 1/4 cup Cilantro

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Cut zucchini in half lengthwise and scoop out the flesh, leaving a 1/4-inch border. Set zucchini boats aside.
  3. 3Heat avocado oil in a skillet over medium heat. Add onion and cook until softened.
