  • 1.5 lbs Pork Shoulder (cut into 1-inch cubes)
  • 1 medium Onion (chopped)
  • 1 medium Carrot (chopped)
  • 2 stalks Celery (chopped)
  • 1 can Coconut Milk (Full-Fat)
  • 2 cups Beef Broth
  • 2 tbsp Soy Sauce (Tamari for Gluten-Free)
  • 2 tbsp Curry Powder
  • 1 tsp Ginger (grated)
  • 2 cloves Garlic (minced)
  • 1/2 tsp Xanthan Gum
  • 4 cups Cauliflower Rice

Instructions

  1. 1In a large pot or Dutch oven, brown pork over medium-high heat.
