Ingredients

  • 1 lb Kielbasa sausage
  • 1 lb Pork shoulder
  • 8 slices Bacon
  • 32 oz Sauerkraut
  • 1/2 medium head Cabbage
  • 2 medium Onion
  • 1/2 cup Dried mushrooms
  • 2 cups Beef broth
  • 2 tbsp Red wine vinegar
  • 1 tbsp Juniper berries
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1Soak dried mushrooms in warm water for 30 minutes. Drain and chop.
  2. 2In a large Dutch oven or pot, cook bacon until crispy. Remove bacon and set aside, reserving bacon fat.
  3. 3Brown pork shoulder in the bacon fat. Remove and set aside.
  4. 4Add chopped onion to the pot and cook until softened. Add sliced kielbasa and cook until browned.
  5. 5Return pork shoulder to the pot. Add sauerkraut, shredded cabbage, soaked mushrooms, beef broth, red wine vinegar, juniper berries, salt, and pepper.
  6. 6Bring to a simmer, then reduce heat to low, cover, and cook for 2 hours, or until the meats are very tender.
  7. 7Crumble bacon and sprinkle over the top before serving.
