Ingredients

  • 1 lb Beef stew meat
  • 2 medium Potato
  • 1 large Carrot
  • 1 large Onion
  • 1 package Gluten-free Japanese curry roux
  • 2 tablespoons Vegetable oil
  • 4 cups Water
  • 4 cups Cooked rice

Instructions

  1. 1Cut beef into bite-sized pieces. Peel and chop potatoes, carrots, and onions.
  2. 2Heat vegetable oil in a large pot over medium heat. Brown the beef on all sides.
  3. 3Add onions and cook until softened. Add potatoes and carrots and cook for a few minutes more.
  4. 4Pour in water and bring to a boil. Reduce heat and simmer until the beef and vegetables are tender, about 30 minutes.
  5. 5Turn off the heat. Break the curry roux into pieces and add to the pot. Stir until the roux is completely dissolved.
  6. 6Simmer for another 5-10 minutes, stirring occasionally, until the curry thickens.
  7. 7Serve over cooked rice.
