Ingredients

  • 2 lbs Potatoes
  • 2 medium Onion
  • 3 oz Anchovy fillets
  • 1 cup Plant-based milk (oat or soy)
  • 1/2 cup Plant-based heavy cream
  • 2 tbsp Dairy-free butter
  • 1/4 cup Breadcrumbs
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Peel and thinly slice the potatoes and onions.
  3. 3Melt dairy-free butter in a skillet over medium heat. Sauté the onions until softened and translucent.
  4. 4Grease a baking dish with dairy-free butter.
  5. 5Layer the potatoes, onions, and anchovy fillets in the baking dish, seasoning with salt and pepper between layers. End with a layer of potatoes.
  6. 6Pour plant-based milk and plant-based heavy cream over the potatoes.
  7. 7Sprinkle breadcrumbs over the top.
  8. 8Bake for 45-50 minutes, or until the potatoes are tender and the top is golden brown.
