Ingredients

  • 6 cups Fresh corn kernels
  • 1 medium Onion
  • 1/4 cup Fresh basil leaves
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Paprika
  • to taste Salt
  • to taste Black pepper
  • as needed Corn husks
  • 1/4 cup Plant-based milk

Instructions

  1. 1Soak the corn husks in warm water for at least 30 minutes to soften.
  2. 2In a large skillet, heat olive oil over medium heat.
  3. 3Add onion and cook until softened.
  4. 4In a blender or food processor, combine corn kernels, onion, basil, plant-based milk, cumin, paprika, salt, and pepper.
  5. 5Blend until smooth.
  6. 6Place a spoonful of the corn mixture in the center of a corn husk.
  7. 7Fold the corn husk over to enclose the filling and tie with a strip of corn husk.
  8. 8Steam the humitas for 30-40 minutes, or bake at 350°F (175°C) for 45 minutes.
