Ingredients

  • 2 cups All-purpose flour
  • 1 cup Cornstarch
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 cup Vegan butter
  • 3/4 cup Sugar
  • 2 tablespoons Plant-based milk
  • 1 teaspoon Vanilla extract
  • 1 can Dairy-free Dulce de Leche
  • 1/4 cup Powdered sugar

Instructions

  1. 1Preheat your oven to 350°F (175°C).
  2. 2In a large mixing bowl, whisk together the 2 cups of All-purpose flour, 1 cup of Cornstarch, 1 teaspoon of Baking powder, and 1/2 teaspoon of Salt until they are well combined.
  3. 3In a separate medium bowl, use a hand mixer or stand mixer to beat the 1 cup of Vegan butter and 3/4 cup of Sugar together until the mixture is light in color and fluffy, which should take about 2 to 3 minutes. Then, add the 2 tablespoons of Plant-based milk and 1 teaspoon of Vanilla extract and mix on low speed until just combined.
  4. 4Gradually add the dry ingredients from the large bowl to the wet ingredients in the medium bowl, mixing on low speed with the mixer or by hand with a spatula until a soft dough just forms and no dry streaks remain.
  5. 5Roll out the dough on a clean, un-floured surface to about 1/8-inch thickness. Use a 1.5 to 2-inch round cookie cutter to cut out circles from the dough.
  6. 6Carefully transfer the cut-out cookie circles to a large baking sheet that has been lined with parchment paper, leaving about 1 inch of space between each cookie.
  7. 7Bake the cookies in the preheated oven for 12 to 15 minutes, or until the edges are very lightly golden and the cookies are set.
  8. 8Let the baked cookies cool completely on the baking sheet for at least 30 minutes before handling them, as they will be delicate when warm.
  9. 9Once the cookies are completely cool, take one cookie and spread about 1 to 2 teaspoons of the 1 can of Dairy-free Dulce de Leche onto its flat side. Place another cookie on top, flat side down, to form a sandwich, then lightly dust the assembled cookies with the 1/4 cup of Powdered sugar using a fine-mesh sieve before serving.
