Ingredients

  • 2 cups All-purpose flour
  • 1 cup Cornstarch
  • 1 teaspoon Baking powder
  • 1 cup Plant-based butter
  • 1/2 cup Sugar
  • 3 Egg yolks
  • 1 teaspoon Vanilla extract
  • 1 can Dairy-free manjar (dulce de leche)
  • for dusting Powdered sugar

Instructions

  1. 1Preheat your oven to 350°F (175°C). In a large mixing bowl, whisk together the 2 cups of All-purpose flour, the 1 cup of Cornstarch, and the 1 teaspoon of Baking powder until well combined. Set this dry mixture aside.
  2. 2In a separate large mixing bowl, using an electric mixer on medium speed, beat the 1 cup of Plant-based butter and the 1/2 cup of Sugar for 2-3 minutes until the mixture is light in color and fluffy in texture. Then, beat in the 3 Egg yolks one at a time, ensuring each yolk is fully incorporated before adding the next. Stir in the 1 teaspoon of Vanilla extract.
  3. 3Gradually add the dry mixture from the first bowl into the wet mixture in the second bowl, mixing on low speed or by hand until a soft dough forms. Do not overmix the dough.
  4. 4On a clean, dry surface (or between two sheets of parchment paper to prevent sticking), roll out the dough to an even 1/4-inch thickness. Use a round cookie cutter (approximately 1.5 to 2 inches in diameter) to cut the dough into circles. Carefully transfer the cut dough circles to a baking sheet lined with parchment paper, leaving about 1 inch between each cookie.
  5. 5Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers are set. The cookies should not brown significantly. Remove the baking sheet from the oven.
  6. 6Allow the cookies to cool on the baking sheet for 5 minutes before carefully transferring them to a wire rack to cool completely. Cooling completely is important to prevent the manjar from melting when assembled.
  7. 7Once the cookies are completely cool, take one cookie and spread a generous amount of the 1 can of Dairy-free manjar onto its flat bottom side. Place another cookie on top, flat side down, to form a sandwich. Repeat with the remaining cookies and manjar. Before serving, dust the assembled alfajores generously with the Powdered sugar.
