Groundnut Stew with Cassava

Ingredients

  • 2 cups Cassava, peeled and cubed
  • 1 cup Groundnut Paste (Peanut Butter)
  • 2 medium Tomato, diced
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 2 tablespoons Cooking Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Cayenne Pepper

Instructions

  1. 1Heat cooking oil in a large pot over medium heat.
  2. 2Add onion and garlic to the pot and sauté until softened, about 3 minutes.
  3. 3Add tomato and cook until slightly softened, about 5 minutes.
  4. 4Stir in groundnut paste and cook for 2 minutes.
  5. 5Add cassava and vegetable broth. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the cassava is tender.
  6. 6Season with salt, pepper, and cayenne pepper to taste. Serve hot.
