Ingredients

  • 4 6-oz Swordfish steaks
  • 2 large Red bell peppers
  • 2 medium Tomatoes
  • 4 cloves Garlic
  • 1/2 cup Almonds
  • 2 slices Bread
  • 2 tbsp Red wine vinegar
  • 1/4 cup Olive oil
  • 1/2 tsp Smoked paprika
  • 1/4 tsp Cayenne pepper
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Preheat grill to medium-high heat.
  2. 2To make the romesco sauce, roast the red bell peppers and tomatoes until the skins are blackened. Peel and seed the peppers and tomatoes.
  3. 3In a food processor, combine the roasted peppers, tomatoes, garlic, sunflower seeds, bread, red wine vinegar, olive oil, smoked paprika, cayenne pepper, salt, and pepper. Blend until smooth.
  4. 4Brush the swordfish steaks with olive oil and season with salt and pepper.
  5. 5Grill the swordfish steaks for 4-5 minutes per side, or until cooked through.
  6. 6Serve the grilled swordfish with the romesco sauce.
