Ingredients

  • 1 medium Fresh Pineapple
  • 0.5 cup Unsweetened Coconut Flakes
  • 1 tablespoon Lime Juice
  • 1 tablespoon Maple Syrup

Instructions

  1. 1Preheat your grill to medium heat, which is about 350-400°F (175-200°C).
  2. 2Prepare the 1 medium Fresh Pineapple by peeling and coring it. Cut the pineapple into 1-inch chunks.
  3. 3Thread the 1-inch pineapple chunks onto skewers, making sure they are snug but not too tight.
  4. 4In a small bowl, whisk together the 1 tablespoon Lime Juice and the 1 tablespoon Maple Syrup until well combined.
  5. 5Evenly brush the pineapple chunks on the skewers with the lime-maple mixture.
  6. 6Place the pineapple skewers on the preheated grill. Grill for 2-3 minutes per side, or until you see distinct grill marks and the pineapple looks slightly caramelized and softened.
  7. 7While the pineapple is grilling, place the 0.5 cup Unsweetened Coconut Flakes in a dry pan over medium heat. Toast the coconut flakes, stirring constantly, for 2-4 minutes until they turn golden brown and fragrant. Watch them very closely as they can burn quickly.
  8. 8Remove the pineapple skewers from the grill. Immediately sprinkle the toasted coconut flakes over the warm pineapple. Serve the grilled pineapple skewers right away.
