Ingredients

  • 8 oz Halloumi Cheese (cut into 1-inch cubes)
  • 2 cups Watermelon (cut into 1-inch cubes)
  • 0.25 cup Fresh Mint Leaves
  • 1 tablespoon Olive Oil
  • 2 teaspoons Balsamic Glaze (optional)

Instructions

  1. 1Preheat your grill to medium heat, which is about 350-400°F (175-200°C).
  2. 2Thread the 8 oz of halloumi cheese cubes and 2 cups of watermelon cubes onto skewers, alternating between the cheese and watermelon.
  3. 3Place the skewers on the preheated grill.
  4. 4Brush the skewers with 1 tablespoon of olive oil.
  5. 5Grill the skewers for 2-3 minutes per side. Look for the halloumi cheese to become golden brown and slightly softened. The watermelon will become warm and slightly caramelized.
  6. 6Remove the skewers from the grill.
  7. 7Garnish the skewers with the 0.25 cup of fresh mint leaves.
  8. 8If desired, drizzle the skewers with 2 teaspoons of balsamic glaze.
  9. 9Serve the skewers immediately.
