Ingredients

  • 4 cups Watermelon
  • 8 oz Dairy-Free Halloumi
  • 1/4 cup Fresh Mint Leaves
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • 2 tbsp Balsamic Glaze

Instructions

  1. 1Preheat your grill to medium heat, which is about 350°F to 400°F (175°C to 200°C).
  2. 2Cut the 4 cups of watermelon into 1-inch cubes. Cut the 8 oz of dairy-free halloumi into 1-inch cubes.
  3. 3Thread the watermelon cubes and the dairy-free halloumi cubes alternately onto skewers. You should have about 4-6 pieces of each per skewer.
  4. 4Place the skewers on the preheated grill. Brush the skewers evenly with the 2 tablespoons of olive oil.
  5. 5Grill the skewers for 3 to 4 minutes on each side. Look for the dairy-free halloumi to become lightly golden and slightly softened. The total cooking time will be about 6 to 8 minutes.
  6. 6Carefully remove the skewers from the grill. Immediately sprinkle the fresh 1/4 cup of mint leaves over the hot skewers.
  7. 7Drizzle the skewers with the 1 tablespoon of lemon juice and the 2 tablespoons of balsamic glaze.
