Ingredients

  • 1 pound Collard Greens
  • 1 medium Red Onion
  • 2 cloves Garlic
  • 1 teaspoon Ginger
  • 2 tablespoons Olive Oil
  • 1/2 cup Water
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Wash the collard greens thoroughly. Remove the tough stems and chop the leaves into bite-sized pieces.
  2. 2Sauté chopped red onion in olive oil until softened.
  3. 3Add minced garlic and grated ginger, and cook for 1 minute.
  4. 4Add the chopped collard greens and water. Season with salt and black pepper.
  5. 5Cover and cook for 25-30 minutes, or until the collard greens are tender. Add more water if needed to prevent sticking.
  6. 6Serve warm as a side dish or a light meal.
