  • 8 pieces Chicken drumsticks
  • 2 medium Red onions
  • 6 cloves Garlic
  • 1 inch Ginger
  • 4 tablespoons Berbere spice blend
  • 1/4 cup Niter Kibbeh (dairy-free)
  • 2 tablespoons Tomato paste
  • 2 cups Chicken broth
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 12 pieces Dairy-free Injera

Instructions

  1. 1In a large pot, sauté finely chopped red onions, garlic, and ginger in dairy-free Niter Kibbeh or vegetable oil until softened.
  2. 2Add berbere spice blend and tomato paste, cook for 2 minutes, stirring constantly.
  3. 3Add chicken drumsticks and coat them in the spice mixture.
  4. 4Pour in chicken broth and bring to a boil. Reduce heat and simmer for 45-60 minutes, or until chicken is cooked through and tender.
