Ingredients

  • 2 cups Rice Flour
  • 2 teaspoons Baking Powder
  • 1/2 cup Sugar
  • 1/2 teaspoon Salt
  • 1.5 cups Water
  • 1/2 cup Coconut Milk
  • 1/4 cup Cheese
  • 2 drops Food Coloring

Instructions

  1. 1In a large bowl, whisk together the 2 cups of rice flour, 2 teaspoons of baking powder, 1/2 cup of sugar, and 1/2 teaspoon of salt until well combined.
  2. 2Gradually pour in the 1.5 cups of water and the 1/2 cup of coconut milk while mixing continuously until you have a smooth batter with no lumps.
  3. 3Add the 2 drops of food coloring to the batter and stir until the color is evenly distributed.
  4. 4Grease 12 small muffin tins or puto molds. Carefully fill each mold about 3/4 full with the batter.
  5. 5Place a small cube of the 1/4 cup of cheese on top of the batter in each mold.
  6. 6Arrange the filled molds in a steamer basket over boiling water. Steam for 20 to 25 minutes, or until a toothpick inserted into the center of a cake comes out clean.
  7. 7Carefully remove the steamer basket from the heat. Let the puto cool in the molds for 5 minutes before serving.
