Ingredients

  • 0.75 cup Rice Flour
  • 0.25 cup Tapioca Starch
  • 1 cup Milk (or Dairy-Free Alternative)
  • 2 Eggs
  • 1 tbsp Sugar
  • 2 tbsp Melted Butter (or Dairy-Free Alternative)
  • 0.25 tsp Salt
  • 2 Apples, peeled and diced
  • 1 tbsp Butter (or Dairy-Free Alternative)
  • 2 tbsp Sugar
  • 1 tsp Cinnamon
  • 1 tsp Lemon Juice

Instructions

  1. 1In a blender or bowl, whisk together rice flour, tapioca starch, milk, eggs, sugar, melted butter, and salt until smooth.
  2. 2Heat a lightly oiled crepe pan or non-stick skillet over medium heat.
  3. 3Pour 1/4 cup of batter onto the hot pan and swirl to create a thin crepe. Cook for 1-2 minutes per side, or until golden brown.
  4. 4Repeat with the remaining batter.
  5. 5While the crepes are cooking, prepare the apple filling: In a skillet, melt butter. Add diced apples, sugar, cinnamon, and lemon juice. Cook until the apples are tender and slightly caramelized, about 8-10 minutes.
  6. 6Fill each crepe with the apple mixture and fold in half or roll up. Serve warm.
