Ingredients

  • 1 1/2 cups Gluten-free all-purpose flour
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 4 large Eggs
  • 1 cup Sugar
  • 1 teaspoon Vanilla extract
  • 1/2 cup Milk (dairy or non-dairy)
  • 1/4 cup Butter, melted
  • 12 oz Chocolate, dark (for coating)
  • 2 tablespoons Coconut oil
  • 2 cups Desiccated coconut

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease and flour a rectangular baking pan.
  2. 2In a bowl, whisk together gluten-free flour, baking powder, and salt.
  3. 3In a separate bowl, beat eggs and sugar until light and fluffy. Stir in vanilla extract, milk, and melted butter.
  4. 4Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. 5Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
