Anzac Biscuits (Dairy-Free)

Classic Australian Anzac biscuits made completely dairy-free. These are crunchy, chewy, and perfect for a sweet treat.

Ingredients

  • 1 cup Rolled oats
  • 1 cup Desiccated coconut
  • 1 cup Plain flour
  • 1 cup Caster sugar
  • 2 tbsp Golden syrup
  • 125 g Dairy-free butter
  • 1 tsp Baking soda
  • 2 tbsp Boiling water

Instructions

  1. 1Preheat oven to 160°C (320°F). Line baking trays with parchment paper.
  2. 2In a large bowl, combine rolled oats, desiccated coconut, plain flour, and caster sugar.
  3. 3In a small saucepan, melt dairy-free butter and golden syrup over low heat.
  4. 4In a separate small bowl, dissolve baking soda in boiling water. Add this to the melted butter mixture.
  5. 5Pour the wet ingredients into the dry ingredients and mix well until combined.
  6. 6Roll spoonfuls of the mixture into balls and place them on the prepared baking trays, leaving space between each biscuit.
  7. 7Gently flatten each ball with a fork.
  8. 8Bake for 12-15 minutes, or until golden brown.
  9. 9Let the biscuits cool on the baking trays for a few minutes before transferring them to a wire rack to cool completely.
