Ingredients

  • 1 large Japanese Sweet Potato (Satsumaimo)
  • 1/2 medium Avocado
  • 1 tbsp Sesame Seeds
  • 1 tsp Tamari (gluten-free soy sauce)
  • 1 tbsp Olive Oil
  • 1/4 tsp Salt

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Wash and dry the sweet potato. Rub with olive oil and sprinkle with salt.
  3. 3Roast for 30-40 minutes, or until tender when pierced with a fork.
  4. 4Let cool slightly, then slice into 1/2-inch thick rounds.
  5. 5Mash the avocado and spread it evenly over the sweet potato slices.
  6. 6Drizzle with tamari and sprinkle with sesame seeds. Serve immediately.
