Ingredients

  • 1.5 lbs Beef Stew Meat
  • 2 medium Potato
  • 1 large Carrot
  • 1 large Onion
  • 1/2 medium Apple
  • 2 tablespoons Curry Powder
  • 2 tablespoons Gluten-Free Soy Sauce (Tamari)
  • 1 tablespoon Ketchup
  • 1 tablespoon Worcestershire Sauce (Gluten-Free)
  • 4 cups Beef Broth
  • 4 cups Rice
  • 1 tablespoon Oil

Instructions

  1. 1Cut the beef into bite-sized pieces. Chop the potato, carrot, onion, and apple into similar sized pieces.
  2. 2Heat oil in a large pot or Dutch oven over medium heat.
  3. 3Brown the beef, then remove from the pot and set aside.
  4. 4Add the onion and cook until softened. Add the potato and carrot and cook for another 5 minutes.
  5. 5Add the curry powder and cook for 1 minute more.
  6. 6Return the beef to the pot and add the apple, tamari, ketchup, and gluten-free Worcestershire sauce. Pour in the beef broth.
  7. 7Bring to a boil, then reduce heat and simmer for 30 minutes, or until the beef and vegetables are tender.
  8. 8Serve over rice.
